100% Tempranillo, aka: Tinto Fino or Tinta del Pais. Clean and bright to the eye, deep ruby in color with burgundy tones at the rim. Complex aromas that blossom, after a period of decanting include, violets, blackberry, blueberry, bramble, black liquorish, spice, and balsamic. A continuation of the aromas to the palate with the addition of earth, vanilla, walnut, and a black peppercorn finish. Unctuous on the palate, medium acidity, medium plus, course tannins, full body. There is a good balance of fresh fruit flavors to offset the coarseness of the tannins. Can be enjoyed today or rested up to 3 to 4 years.
Food Pairing: lean to mid fatty cuts of beef to cut through the tannins. Aged cheeses, pork sausage, steak, chili con carne, lamb chops and beef goulash, kielbasa
