80% Pinot Noir, 20% Chardonnay. Pretty gold in color with fine persistent perlage. Classic Champagne florals, bruised green apple, citrus, lemon, Mirabelle plums, brioche, peach, toast, pear, grapefruit, yellow apple, and spices. Creamy mousse expands gently on the palate with the noticeable high acidity giving lift. Medium plus flavor intensity. Mid palate notes include honey, nutty, orange peel, vanilla, and toast wood tones which all last into the refreshing long finish.
Food Pairing: oysters from Marennes-Oléron, prawns or lobster flambéed with Dubosquet XO cognac, sea bass à la plancha, white meats with truffled morel sauce, citrus tart with lemon or Crete apricots, Norwegian vanilla and dark chocolate omelet.
