90% Mauzac with a blend of Chenin and Chardonnay. A lively sparkling Brut from the Limoux DOC, where monks were making sparkling wine 100yrs before Champagne. Straw yellow with greenish tints. Aggressive pelage with aromas of green apple, pear, honeysuckle jasmine, citrus, kumquat, grapefruit, almond, amoretti biscuits, and white tea. Light toast notes on the palate. Dry wine, well integrated acidity at medium plus with a tart, citrus, medium plus finish.
