Blend of Grenache, Shiraz, Gordo (Muscat of Alexandria), Zinfandel, Mataro (Mouvedre), Cabernet Sauvignon, and Chardonnay. Aromas of dark chocolate, mocha, caramel, stewed fruits, and light florals. The flavors meld together in an oxidative way which change depending on temperature. Further expanding on the palate is a chocolate liquor like Kalua, vanilla, plum, figs, black cherry, dried bramble fruits with a long caramel, chocolate liquor finish. This is medium sweet crafted in a tawny port style that has been steeped in a special blend of 100% dark chocolate. Fragrance and expressions are much lighter when served cool. Sweetness balanced with acidity, tannins at medium and of fine grain, pronounced intensity of flavors.

The Tawny is a blend of predominantly Grenache, Shiraz and Gordo (Muscat of Alexandria). There are small quantities of several other varieties we grow that have also been blended into our solera over the years including Zinfandel, Mataro, Cabernet, and Chardonnay. The Tawny is made as a traditional fortified, partially fermented and then neutral spirit is added. The wine is aged in old oak casks for a minimum of 5 years with some of the casks over 100 years old. The tawny blend is then steeped in our special blend of 100% dark chocolate. The Chocolatier is vegan friendly and dairy free.
