100% Pais. Medium ruby red in color. Awaking perfume, floral wild red flowers, concentrated ripe strawberry, raspberry, mineral, with undertones of forest. Continuing to the palate brings out the blueberry, dark currants, plum, black cherry, smoke-slate, and vanilla. This is a dry wine with medium acidity, grippy chalky tannins which bring out more body than you would expect from a Pias. Revendicate of a Beaujolais in intensity and concentration. Medium plus fruit, mineral and tart finish.
Food Pairing: lamb roast, seared duck breast with cherries and fig, stroganoff, garlicky sausage, butternut squash, camembert, edam, Munster, mild cheddar.
