50% Barbera, 50% Cabernet Sauvignon. “Panta rei” is a Greek expression meaning “everything flows.” Deep ruby in color. Persistent aromas of violets, lavender, sour red cherry, raspberry, blackberry, plum, black cherry, currants, vanilla, baking spices, chocolate, and graphite. On the palate, concentrated flavors of dried red and black fruits from appassimento production are complemented by plush bramble, smoky spice, dark chocolate, savory clove, anise, toast, sweet tobacco, and walnut, with hints of earthy tobacco and a long finish of dried herbs and brown crumbs. This is a dry wine with medium acidity and silky, medium-plus chalky tannins that provide structure and weight. The body is medium-plus, with medium-plus flavor intensity and a long finish where fruit, spice, and savory notes linger harmoniously.
