100% Tinto Fino (Tempranillo). Deep ruby color with garnet hues. Pleasant, complex aromas of oak, dark spice, vanilla, blackberry, black plum, white pepper, fig compote, and leather. Additional flavors of bramble, blueberry, black cherry, earthy smoke, vanilla, and caramel. This is a dry wine with thick concentrated flavors. Acid pings at medium, while chalky but velvety tannins boost the body up to medium plus with equal concentration. Leading though the tasting, one experiences a range of flavors that percolate. Midpalate takes you to red fruit notes of red cherry and raspberry, before culminating though a long finish of smoke, dried black fruit and cocoa. Totally engaging and interesting. Just a well-balanced, well thought out wine for a highly discriminating palate.
Food Pairing: cured meat, ragu with pasta, wild boar, dry-aged steak, duck breast, manchego, parmesan, pecorino, stilton mushroom risotto, savory sauces with earthy notes, reductions or demi-glaze.
